Sugar, Spice and Everything Nice

I was a little under the weather during for Thanksgiving so I didn’t get to enjoy the usual eat till you drop tradition of the holiday… and more disturbingly I didn’t get any pumpkin pie!  To make up for that flavour after the fact I decided to find and make a recipe using the pumpkin pie spice I found in my cabinet.  ppsI have no idea when spice made it’s way into our cabinet and I’m pretty sure it has never been used.  Luckily after a quick google search I found a recipe for these delicious and easy pumpkin pie spiced almonds:

Pumpkin Pie Spiced Almonds

Difficulty: Easy
Prep Time: ~5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

  • 1 cup raw almonds
  • 1/2 tsp. cinnamon
  • 1-1/2 tsp. pumpkin pie spice
  • 1/4 tsp sea salt
  • 2 tbsp. agave nectar or maple syrup
  • 1/2 tsp. vanilla extract

Directions: Start by preheating your oven to 325 degrees Fahrenheit. While the oven is preheating, pour 1 cup almonds into a large mixing bowl. Add your cinnamon, pumpkin pie spice, and salt — toss to coat. Drizzle the agave and vanilla extract on the almonds and stir until all almonds are coated with the spices and sweetener. Spray a foil lined cookie sheet with cooking spray and spread the almonds on the sheet in a single layer. Cook for 15-20 minutes, flipping once, until almonds are roasted. Let cool completely before storing in an airtight container.

They were super easy to make, which is a good thing since they are super easy to eat as well!  So I can knock off the first few spices off my list: pumpkin pie spice, cinnamon, salt and vanilla!spices1

 

 

If you don’t already have pumpkin pie spice (and I’m assuming most people don’t) no need to worry!  You can make your own by combining these more common spices:

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves.
