I’m going to take a break from going green to go RED… with cabbage that is! I’ve been eating this salad all summer and I think it’s too good to keep to myself.
Red Cabbage – 6 cups of cabbage julienned thin… think coleslaw size!
Corn – one can or 2 ears of corn ( if canned get it with as little added salt and sugar as possible)
Cilantro – 1/4 cup minced
Lemon juice- 3 Tablespoons (about 1/2 a lemon)
Olive oil – 3 Tablespoons
Salt – 1/2 teaspoon
I love this salad because the colors are beautiful and the taste is fresh and delicious. Now these amounts are how I like the salad. That’s the best part of this salad, it’s easy to customize! Do a lot of tasting to decide how you like it 🙂 If you aren’t a fan of cilantro leave it out and it will still be tasty 🙂 Sometimes I add sesame seeds or hemp seeds, as you can see in the picture.
Directions:
Julienne the cabbage, mince the cilantro and rinse or cut the corn off the cob.
Put the cabbage in a mixing bowl and add the salt and the olive oil. Throughly massage with your hands, you should feel the cabbage wilt a bit. Add the lemon juice and keep massaging. Taste the cabbage and adjust the seasonings to your taste. Add the corn and cilantro and taste again.
